Production of a protein rich ingredient from mushroom by-products has been launched

Exciting news regarding the development of alternative proteins.

This week, the production of a protein rich ingredient from mushroom by-products has been launched at Celabor. Coming from mushroom stems that are usually thrown away, they were first collected, cleaned, dried and ground by CTICH, who also carried out lab-scale extraction optimisation in their facilities, before being sent to Celabor for the pilot-scale extraction process, to produce a safe and high quality plant protein ingredient.

This ingredient will be tested for its functional properties, to identify in which food product it could be best used (in smoothies, meat analogues or even ice cream! ) to produce healthy and sustainable products! 

With the process developed, we are able to:

  • Provide a healthy, plant-based protein source as an alternative to meat.
  • Valorisation and exploitation of waste and by-products from the cultivated mushroom industry
  • The results of LIKEAPRO will provide new knowledge with potential for use in a commercial context and transfer to the manufacturing sector, creating technological and economic impact to cultivated mushroom industry
